Obituary of Elizabeth Florence Baxter
The family of Elizabeth “Betty” Florence Baxter sadly announces her passing on January 7, 2025, at the Saint John Regional Hospital.
Born on August 13, 1939, in Saint John, Betty was the daughter of Leonard and Florence (McHugh) Martin. In the 1970s, she and her late husband, Sidney (Sid) William Baxter, moved to the Kingston Peninsula, where they raised their three surviving children: Heather Baxter, Tanya Baxter, and William (Bill) Baxter. Besides her husband and parents, Betty is predeceased by brother; Leo Martin, and Albert Winter (Susan), Sisters; Kay Hosford (Bliss), and Mary Sudsbear (Bob).
Betty loved the simple joys of country life. She enjoyed long walks along Moss Glen Road, collecting antiques, and delving into local history. A creative spirit, she spent many happy hours painting, working on ceramics and restoring antiques. She had a passion for gardening, tending to her flowers, and trees. She also had a fondness for feeding and watching birds from her windows, finding peace in their presence. Her love for nature extended to the family pets, who were always a source of companionship and happiness.
Her greatest joy came from spending time with her grandchildren: Maggie Baxter (Mark Ennis), Jacob Baxter (Mackenzie Gillespie-Tracey), and Kaleb Baxter (Olivia Stymiest). She took great pride in their accomplishments and made it a priority to attend their hockey games, pageants, graduations, and other events. Where Friday night sleepovers always led to Saturday morning groceries trips that in reality turned into a full blown shopping day that ended with lots of toys and chinese food spoils. These are memories her grandchildren will always cherish.
Although Betty preferred to keep to herself and a small circle of close friends, her legendary lemon tarts made her a household name in the community. She was well-known for showing up to functions, receptions, and ceremonies with trays of her perfectly made lemon tarts, which were so popular that you had to act fast to grab one before they were gone. She might not have attended every event, but her tarts certainly did. If she liked you, she liked you—and if you were lucky enough to be in her good books, you could always count on a batch of her signature treats.
The family would like to express their sincere gratitude to the staff at Kings Way Care Center for their exceptional care and kindness, making Betty’s last four years comfortable and safe. They also wish to thank the staff at the Saint John Regional Hospital for their support and compassion during Betty’s final hours, ensuring she was comfortable and at peace.
Betty’s life was centered around her family and the things she loved. She will be remembered for her talent in the kitchen with her nostalgic dishes that the family will never forget, and her unconditional love and generosity she had for her children and grandchildren.
Resting at Kennebecasis Community Funeral Home, 152 Pettingill Road, Quispamsis (506-849-2119) with visiting on Sunday, January 12, 2025, from 2-4 and 6-8 PM. Mass of Christian Burial will take place at St. Bridget’s Catholic Church, Summerville on Monday, January 13, 2025, at 11AM. Interment to take place at St. Bridget’s Cemetery at a later date. For those who wish, donations in memory of Betty can be made to the Saint John SPCA or to a charity of the donor’s choice.
